I am Stefano Diaz, owner of The Meat Wagon. I graduated Le Cordon Bleu in 2011 and started my culinary career shortly after at Biltmore in Asheville, North Carolina. After four years as a cook I fell in love with butchering. I completed a three month intensive, classical butchers apprenticeship with Fleisher's. I worked as their head butcher in their Kingston location until 2017 when the location was shut down. Since then I have been working with Marbled Meat Shop in Cold Spring as their manager and head butcher.
